Ingredients:

  • 1 pound (450g) pasta (penne, rigatoni, or any preferred shape)
  • 2 tablespoons olive oil
  • 4 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon sugar
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 cup grated Gruyère cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh thyme leaves (optional, for garnish)








Instructions:

  1. Cook the Pasta:

    • Bring a large pot of salted water to a boil.
    • Cook the pasta according to package instructions until al dente.
    • Drain and set aside.
  2. Caramelize the Onions:

    • In a large skillet, heat the olive oil over medium heat.
    • Add the sliced onions and cook, stirring occasionally, until they are golden brown and caramelized. This should take about 25-30 minutes.
    • Add the minced garlic and cook for another 1-2 minutes until fragrant.
    • Stir in the balsamic vinegar, Worcestershire sauce, and sugar. Cook for another 2-3 minutes until the liquid is absorbed.
    • Season with salt and pepper to taste.
  3. Prepare the Sauce:

    • Preheat the oven to 375°F (190°C).
    • Add the beef broth to the skillet with the caramelized onions and bring to a simmer.
    • Reduce the heat and let it cook for about 10 minutes, allowing the flavors to meld.
    • Stir in the heavy cream and let it simmer for another 5 minutes until slightly thickened.
  4. Combine Pasta and Sauce:

    • In a large mixing bowl, combine the cooked pasta and the creamy onion sauce.
    • Add half of the Gruyère cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Mix well to combine.
  5. Bake:

    • Transfer the pasta mixture to a large baking dish.
    • Top with the remaining Gruyère, mozzarella, and Parmesan cheese.
    • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly, and the top is golden brown.
  6. Serve:

    • Remove from the oven and let it cool for a few minutes.
    • Garnish with fresh thyme leaves if desired.
    • Serve warm and enjoy!
